Joe has been making this jerky for roughly thirty-five years. Not as a side hustle deck. Not as a pitch. Just good Angus beef, a recipe he kept refining, and bags that went to friends, family, and whoever asked for another one.

Somewhere along the way the question stopped being polite and started being serious: why isn't this a company? The people who ate it already treated it like one.

Over those years the bags reached farther than a hobby usually does. Among the friends, family, and figures who tried it — and kept asking for more — were Joe Foss, Medal of Honor recipient; Bob Corbin, former Arizona Attorney General; and Gary Swanson, the artist. Soft history. No contracts. No speeches. Just people who knew the recipe when it lived in a kitchen, not on a shelf.

So we put a name on it. High Desert Jerky Co. Same standard. Premium Angus. Four flavors to start — Original, Peppered, Hot, and Sweet Heat. An old-school approach in a market full of shortcuts.

We are not inventing a heritage we do not have. We are finally labeling the one we do.
